This soup earns the name “All Good” because it is fast and easy to prepare. For the health conscious, it is full of protein, leafy greens, and has a pureed cauliflower base. For foodies like me, this soup is warm, savory and full of flavor!
Homemade chicken soup is a tried and true home remedy for winter colds and sinus sniffles. I like to make a batch as meal prep for a clean, lean protein and veggie weekday lunch. Homemade food speaks of value and care, and no one should care more about you than you!
Shop for these items:
Fresh Chicken Leg Quarters, Celery, Onion, Cauliflower, Kale, Carrots and Chicken Broth
Boil the chicken in a half full pot of water with big chunks of celery and onion.
While the chicken is boiling, chop and boil a head of cauliflower to use to thicken the soup’s base.
Once the cauliflower is boiled, mash or puree it in a blender until it is smooth.
Once the chicken is cooked thoroughly, remove the onion and celery, and add salt, pepper, paprika, plus a dash of cayenne to season along with a carton of chicken broth. Taste broth to see if additional seasoning is needed.
Add kale and carrots to the soup last, as they cook pretty quickly.
You are now ready to enjoy this nutritious winter’s treat! Hearty enough to eat alone, but also great as a side dish. If you like to meal prep like I do, small batches in the freezer will thaw really well overnight.
